Ingredients
Oreo Base
- 2 cups Oreo cookie crumbs
- 4 tablespoons melted butter
Mint Chocolate Chip Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1/2 teaspoon mint extract
- 1 cup mini chocolate chips
- Few drops of green food coloring (optional)
Fudge Brownie Topping
- 1 box brownie mix (kosher)
- Ingredients as per brownie mix box instructions (typically oil, egg, and water)
Instructions
Oreo Base
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine the Oreo cookie crumbs and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Set aside.
Mint Chocolate Chip Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth.
- Add the eggs one at a time, beating well after each addition.
- Mix in the sour cream and mint extract. If desired, add a few drops of green food coloring to achieve a light green hue.
- Fold in the mini chocolate chips.
- Pour the filling over the Oreo base, smoothing the top with a spatula.
- Bake for about 50-60 minutes, or until the center is set and the top looks lightly browned.
