Cinnamon Strawberry Dream Cheesecake
Ingredients
For the Cinnamon Roll Base:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1/2 cup warm milk
- 1 large egg
- 2 tsp instant yeast
- 1 tsp ground cinnamon
- 1/2 tsp salt
For the Strawberry Filling:
- 16 oz (2 containers) Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped
For the Marshmallow Topping:
- 2 cups mini marshmallows
- 1/4 cup heavy cream
- 1/2 tsp vanilla extract
Instructions
Prepare the Cinnamon Roll Base:
- In a large bowl, combine warm milk and yeast. Let sit for 5 minutes until frothy.
- Add melted butter, sugar, and egg to the yeast mixture. Mix well.
- In a separate bowl, combine flour, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes.
- Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 350°F (175°C).
- Once risen, roll the dough out to fit the bottom of a 9-inch springform pan.
- Press the dough evenly into the pan and bake for 10 minutes. Allow to cool.
Prepare the Strawberry Filling:
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add the sugar and continue beating until combined.
- Beat in the eggs one at a time, followed by the sour cream and vanilla extract.
- Fold in the chopped strawberries.
- Pour the strawberry filling over the cooled cinnamon roll base.
- Bake at 350°F (175°C) for 50-60 minutes or until the center is set.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the Marshmallow Topping:
- In a small saucepan over medium heat, combine the mini marshmallows and heavy cream.
- Stir constantly until the marshmallows are completely melted and the mixture is smooth.
- Remove from heat and stir in the vanilla extract.
- Allow the marshmallow mixture to cool slightly, then spread it over the chilled cheesecake.
- Refrigerate for 30 minutes to set the topping before serving.
