  • 1/2 cup sour cream
  • 1/2 cup heavy cream

  • 1 teaspoon mint extract
  • 1 cup mini chocolate chips
  • Green food coloring

Cheesecake Truffle Topping

  • 8 ounces Norman's Kosher Cholov Yisroel Cream Cheese (1 container), softened
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup finely chopped chocolate (for rolling)

Instructions

Chilli Pepper & Caramel Base

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and ground chili pepper.
  3. Add melted butter and caramel sauce; stir until well combined.
  4. Press the mixture evenly into the bottom of a 9-inch springform pan.
  5. Bake for 8-10 minutes, then let it cool. Reduce oven temperature to 300°F (150°C).

Mint Chocolate Chip Filling

  1. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  2. Add eggs, one at a time, beating well after each addition.
  3. Mix in sour cream, heavy cream, vanilla extract, and mint extract until fully combined.
  4. Fold in mini chocolate chips and add a few drops of green food coloring until desired color is reached.
  5. Pour filling over the cooled crust.
