Maple Pecan Bliss Cheesecake with Whiskey Chocolate & Hot Fudge
Ingredients
Maple Pecan Base
- 1 cup graham cracker crumbs
- 1 cup finely chopped pecans
- 1/4 cup melted butter
- 1/4 cup maple syrup
Whiskey & Chocolate Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
- 1 cup granulated sugar
- 3 large eggs
- 1/3 cup sour cream
- 1/4 cup heavy cream
- 2 tablespoons of whiskey
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips, melted
Hot Fudge Topping
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup light corn syrup
- 6 oz semi-sweet chocolate, chopped
- 1 teaspoon vanilla extract
Instructions
Maple Pecan Base
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, chopped pecans, melted butter, and maple syrup.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then allow to cool while preparing the filling.
Whiskey & Chocolate Filling
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add sugar and mix until well combined.
- Beat in the eggs one at a time.
- Mix in sour cream, heavy cream, whiskey, and vanilla extract until smooth.
- Fold in the melted chocolate chips until well incorporated.
- Pour the filling over the cooled maple pecan base.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, leaving the cheesecake inside to cool gradually for 1 hour.
- Refrigerate for at least 4 hours or overnight before adding the hot fudge topping.
Hot Fudge Topping
- In a small saucepan over medium heat, combine heavy cream, butter, sugar, and corn syrup.
- Stir constantly until the mixture begins to simmer.
- Remove from heat and add the chopped chocolate, stirring until completely melted and smooth.
- Stir in vanilla extract.
- Allow the fudge to cool slightly before pouring over the chilled cheesecake.
Serving
- Once the hot fudge topping is set, remove the cheesecake from the springform pan.
