Maple Pecan Bliss Cheesecake with Whiskey Chocolate & Hot Fudge

Ingredients

Maple Pecan Base

  • 1 cup graham cracker crumbs
  • 1 cup finely chopped pecans
  • 1/4 cup melted butter
  • 1/4 cup maple syrup

Whiskey & Chocolate Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/3 cup sour cream
  • 1/4 cup heavy cream
  • 2 tablespoons of whiskey
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips, melted

Hot Fudge Topping

  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup light corn syrup
  • 6 oz semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract

Instructions

Maple Pecan Base

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, chopped pecans, melted butter, and maple syrup.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then allow to cool while preparing the filling.

Whiskey & Chocolate Filling

  1. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  2. Add sugar and mix until well combined.
  3. Beat in the eggs one at a time.
  4. Mix in sour cream, heavy cream, whiskey, and vanilla extract until smooth.
  5. Fold in the melted chocolate chips until well incorporated.
  6. Pour the filling over the cooled maple pecan base.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and crack the door open, leaving the cheesecake inside to cool gradually for 1 hour.
  9. Refrigerate for at least 4 hours or overnight before adding the hot fudge topping.

Hot Fudge Topping

  1. In a small saucepan over medium heat, combine heavy cream, butter, sugar, and corn syrup.
  2. Stir constantly until the mixture begins to simmer.
  3. Remove from heat and add the chopped chocolate, stirring until completely melted and smooth.
  4. Stir in vanilla extract.
  5. Allow the fudge to cool slightly before pouring over the chilled cheesecake.

Serving

  1. Once the hot fudge topping is set, remove the cheesecake from the springform pan.
