Pistachio Caramel Mocha Cheesecake Delight
Ingredients
For the Pistachio Crumble Base:
- 1 cup unshelled pistachios, chopped finely
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
For the Salted Caramel Filling:
- 32 oz (4 containers) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup salted caramel sauce
- 1 teaspoon vanilla extract
For the Mocha Latte Topping:
- 1 cup heavy cream
- 2 tablespoons instant coffee granules
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
Instructions
For the Pistachio Crumble Base:
- Preheat your oven to 350°F (175°C).
- Mix the chopped pistachios, graham cracker crumbs, granulated sugar, and melted butter together in a bowl until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then allow to cool completely.
For the Salted Caramel Filling:
- Reduce the oven temperature to 325°F (163°C).
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Add the granulated sugar and mix well.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the salted caramel sauce and vanilla extract until well combined.
- Pour the filling over the cooled pistachio crumble base.
- Bake for 55-65 minutes, or until the center is just set and a little jiggly.
- Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour.
- Refrigerate the cheesecake for at least 4 hours or overnight for best results.
For the Mocha Latte Topping:
- In a mixing bowl, combine the heavy cream and instant coffee granules. Let it sit for 5 minutes to allow the coffee to dissolve.
- Whip the cream mixture until soft peaks form.
- Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Spread the mocha latte topping evenly over the chilled cheesecake.
- Dust with cocoa powder for a finishing touch.
