Autumn Bliss Cheesecake

Ingredients

Oreo Base

  • 2 cups Oreo cookie crumbs
  • 1/4 cup melted butter

Pumpkin Spice Filling

  • 24 oz (3 containers) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 tbsp all-purpose flour

Peach & Mango Topping

  • 1 cup fresh or canned peaches, diced
  • 1 cup fresh or canned mango, diced
  • 1/4 cup granulated sugar
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

Oreo Base

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the Oreo cookie crumbs and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
  4. Bake for 10 minutes, then set aside to cool.

Pumpkin Spice Filling

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  2. Add the sugar and mix until well combined.
  3. Blend in the pumpkin puree, eggs, and vanilla extract until fully incorporated.
  4. Add the cinnamon, ginger, nutmeg, cloves, and flour, and mix until smooth.
  5. Pour the filling over the cooled Oreo base in the springform pan.
  6. Bake in the preheated oven for 60-70 minutes, or until the center is almost set but still slightly jiggly.
  7. Turn off the oven and let the cheesecake cool inside with the oven door slightly ajar.
  8. Refrigerate the cheesecake for at least 4 hours or overnight before adding the topping.

Peach & Mango Topping

  1. In a small saucepan, combine the peaches, mango, sugar, water, and lemon juice.
  2. Bring the mixture to a boil over medium heat.
  3. In a small bowl, dissolve the cornstarch in a little bit of water to create a slurry.
  4. Add the cornstarch slurry to the saucepan, stirring continuously until the mixture thickens.
  5. Remove from heat and let cool to room temperature.
  6. Spoon the peach and mango topping over the chilled cheesecake before serving.

Serving

Carefully remove the cheesecake from the springform pan and transfer it to a serving plate. Slice and serve chilled, garnished with additional peach and mango pieces if desired. Enjoy your Autumn Bliss Cheesecake!
