Autumn Bliss Cheesecake
Ingredients
Oreo Base
- 2 cups Oreo cookie crumbs
- 1/4 cup melted butter
Pumpkin Spice Filling
- 24 oz (3 containers) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 tbsp all-purpose flour
Peach & Mango Topping
- 1 cup fresh or canned peaches, diced
- 1 cup fresh or canned mango, diced
- 1/4 cup granulated sugar
- 2 tbsp water
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
Oreo Base
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the Oreo cookie crumbs and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
- Bake for 10 minutes, then set aside to cool.
Pumpkin Spice Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Add the sugar and mix until well combined.
- Blend in the pumpkin puree, eggs, and vanilla extract until fully incorporated.
- Add the cinnamon, ginger, nutmeg, cloves, and flour, and mix until smooth.
- Pour the filling over the cooled Oreo base in the springform pan.
- Bake in the preheated oven for 60-70 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the oven door slightly ajar.
- Refrigerate the cheesecake for at least 4 hours or overnight before adding the topping.
Peach & Mango Topping
- In a small saucepan, combine the peaches, mango, sugar, water, and lemon juice.
- Bring the mixture to a boil over medium heat.
- In a small bowl, dissolve the cornstarch in a little bit of water to create a slurry.
- Add the cornstarch slurry to the saucepan, stirring continuously until the mixture thickens.
- Remove from heat and let cool to room temperature.
- Spoon the peach and mango topping over the chilled cheesecake before serving.
Serving
Carefully remove the cheesecake from the springform pan and transfer it to a serving plate. Slice and serve chilled, garnished with additional peach and mango pieces if desired. Enjoy your Autumn Bliss Cheesecake!
