Ingredients

Graham Cracker Base

Strawberry Filling

  • 1 cup fresh strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon lemon juice

Whipped Cream & Cherry Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh cherries for garnish

Instructions

Graham Cracker Base

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine Graham cracker crumbs, melted butter, and granulated sugar until well mixed.
  3. Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
  4. Bake for 10 minutes, then set aside to cool.

Cheesecake Filling

  1. Reduce oven temperature to 325°F (163°C).
  2. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  3. Add granulated sugar and vanilla extract, and continue to mix until combined.
  4. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
  5. Fold in sour cream until the mixture is smooth and creamy.
  6. Pour the filling over the cooled Graham cracker base.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven, crack the oven door open, and let the cheesecake cool inside for 1 hour. Then, refrigerate for at least 4 hours or overnight.

Strawberry Filling

  1. In a small saucepan, combine strawberries, granulated sugar, cornstarch, water, and lemon juice.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries break down, about 5 minutes. Set aside to cool.

Whipped Cream & Cherry Topping

  1. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
