Avocado Lime Peanut Butter Delight Cheesecake

Ingredients

Crust

  • 1 and 1/2 cups crushed Graham crackers
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted

Filling

  • 24 oz (3 containers) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 ripe avocados, mashed
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • Pinch of salt

Topping

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Instructions

Crust

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the crushed Graham crackers, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup or glass to press the crust firmly.
  4. Bake the crust for 10 minutes, then remove from oven and allow it to cool while preparing the filling.

Filling

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  2. Gradually add the granulated sugar and continue to beat until well incorporated.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Blend in the mashed avocados, sour cream, fresh lime juice, lime zest, vanilla extract, and salt. Mix until fully combined and smooth.
  5. Pour the filling into the prepared crust, spreading it evenly.
  6. Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
  7. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Topping

  1. In a medium bowl, beat the peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  2. Spread the peanut butter mixture evenly over the chilled cheesecake.
  3. Refrigerate the cheesecake for an additional 30 minutes to allow the topping to set.

Serving

  1. Carefully run a knife around the edge of the springform pan before releasing the sides.
  2. Slice the cheesecake and serve chilled. Enjoy the harmonious blend of avocado, lime, and peanut butter flavors!
