Avocado Lime Peanut Butter Delight Cheesecake
Ingredients
Crust
- 1 and 1/2 cups crushed Graham crackers
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
Filling
- 24 oz (3 containers) of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup granulated sugar
- 3 large eggs
- 2 ripe avocados, mashed
- 1/2 cup sour cream
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- Pinch of salt
Topping
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
Instructions
Crust
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the crushed Graham crackers, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture evenly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup or glass to press the crust firmly.
- Bake the crust for 10 minutes, then remove from oven and allow it to cool while preparing the filling.
Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Gradually add the granulated sugar and continue to beat until well incorporated.
- Add the eggs, one at a time, beating well after each addition.
- Blend in the mashed avocados, sour cream, fresh lime juice, lime zest, vanilla extract, and salt. Mix until fully combined and smooth.
- Pour the filling into the prepared crust, spreading it evenly.
- Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
Topping
- In a medium bowl, beat the peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
- Spread the peanut butter mixture evenly over the chilled cheesecake.
- Refrigerate the cheesecake for an additional 30 minutes to allow the topping to set.
Serving
- Carefully run a knife around the edge of the springform pan before releasing the sides.
