Quinoa Peanut Butter Citrus Dream Cheesecake
Ingredients
Quinoa Base
1 cup cooked quinoa
1/2 cup almond meal
2 tbsp coconut sugar
1/4 cup melted coconut oil
1/2 tsp vanilla extract
Pinch of salt
Peanut Butter Cup Filling
24 oz of Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
1 cup peanut butter
1 cup sugar
3 large eggs
1 tsp vanilla extract
Blood Orange & Grapefruit Topping
1/2 cup blood orange juice
1/2 cup grapefruit juice
1/3 cup sugar
2 tbsp cornstarch
1 tsp lemon juice
Zest of 1 blood orange
Instructions
Quinoa Base
Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
In a bowl, combine the cooked quinoa, almond meal, coconut sugar, melted coconut oil, vanilla extract, and a pinch of salt.
Press the mixture into the bottom of the prepared pan.
Bake for 10-12 minutes, or until lightly golden. Allow to cool completely.
Peanut Butter Cup Filling
Reduce the oven temperature to 325°F (163°C).
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
Add the peanut butter and sugar, and continue to beat until well combined.
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
Stir in the vanilla extract.
Pour the filling over the cooled quinoa base.
Bake for 50-60 minutes, or until the center is set and just slightly jiggly. Allow to cool at room temperature, then refrigerate for at least 4 hours, preferably overnight.
Blood Orange & Grapefruit Topping
In a small saucepan, combine the blood orange juice, grapefruit juice, sugar, cornstarch, lemon juice, and zest.
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Remove from heat and let the topping cool completely.
Once the cheesecake is fully chilled, spread the blood orange and grapefruit topping evenly over the top.
Serving
Loosen the cheesecake from the sides of the springform pan by running a knife around the edge; remove the sides of the pan.
Slice and serve chilled for the best flavor and texture.
