Strawberry Caramel Oreo Delight Cheesecake

Ingredients

Oreo Base

  • 2 cups crushed Oreo cookies (about 20 cookies)
  • 1/4 cup melted butter

Strawberry Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers), at room temperature
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed

Caramel Sauce Topping

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream, at room temperature
  • 2 tablespoons unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Oreo Base

  1. Preheat your oven to 350°F (175°C).
  2. Mix the crushed Oreo cookies and melted butter in a bowl until well combined.
  3. Press the Oreo mixture into the bottom of a 9-inch springform pan to form a crust.
  4. Bake the crust for 8-10 minutes. Let cool completely before adding the filling.

Strawberry Filling

  1. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with the granulated sugar until smooth and creamy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Mix in the sour cream and vanilla extract until fully combined.
  4. Fold in the strawberry puree until evenly distributed.
  5. Pour the strawberry cream cheese mixture over the cooled Oreo crust.
  6. Bake in a preheated oven for 45-55 minutes, or until the center is set and slightly jiggly.
  7. Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
  8. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.

Caramel Sauce Topping

  1. In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar is dissolved.
  2. Increase the heat to high and bring the mixture to a boil. Do not stir. Cook until the mixture turns a deep amber color.
  3. Remove from heat and carefully whisk in the heavy cream, butter, vanilla extract, and salt until smooth.
  4. Let the caramel sauce cool to room temperature.

Assemble the Cheesecake

  1. Once the cheesecake has fully chilled, remove it from the springform pan and place it on a serving plate.
  2. Drizzle the caramel sauce over the top of the cheesecake.
  3. Garnish with fresh strawberries if desired.
  4. Slice and enjoy!
