Exquisite Harmony Cheesecake

Matcha & Sesame Base

  • 1 cup graham cracker crumbs
  • 2 tablespoons matcha powder
  • 2 tablespoons sesame seeds
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Combine graham cracker crumbs, matcha powder, sesame seeds, and sugar in a bowl. Pour in melted butter and mix until the mixture resembles wet sand. Press evenly into the bottom of a springform pan. Refrigerate to set while preparing the filling.

Rosemary & Fig Filling

  • 32 oz (4 containers) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup fig preserves
  • 1 tablespoon fresh rosemary, finely chopped

Preheat oven to 325°F (163°C). Beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, sour cream, and heavy cream until fully incorporated. Fold in fig preserves and chopped rosemary. Pour the mixture over the chilled base.

Peach & Mango Topping

  • 2 peaches, peeled and sliced thin
  • 1 large mango, peeled and sliced thin
  • 1/2 cup apricot jam, warmed

Arrange peach and mango slices decoratively on top of the cheesecake. Brush the warm apricot jam over the fruit slices to create a glaze.

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven, leave the door ajar, and let the cheesecake cool completely inside. Refrigerate for at least 4 hours or overnight before serving.
