Bourbon Caramel Churro Cheesecake Bliss
Ingredients
Churro Base
- 2 cups crushed churros
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Bourbon & Caramel Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers), softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1/4 cup bourbon
- 1/4 cup caramel sauce
- 1 tsp vanilla extract
Bourbon & Butterscotch Topping
- 1/2 cup butterscotch chips
- 2 tbsp heavy cream
- 1 tbsp bourbon
- Caramel sauce for drizzling
Instructions
Churro Base
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed churros and sugar.
- Mix in the melted butter until well combined.
- Press the mixture into the bottom of the prepared springform pan to form an even layer.
- Bake for 10 minutes. Allow to cool while preparing the filling.
Bourbon & Caramel Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add the granulated sugar and mix until well combined.
- Beat in the eggs one at a time, mixing well after each addition.
- Add the sour cream, bourbon, caramel sauce, and vanilla extract. Mix until smooth.
- Pour the filling over the prepared churro base.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
Bourbon & Butterscotch Topping
- In a microwave-safe bowl, combine the butterscotch chips and heavy cream.
- Microwave in 20-second intervals, stirring between each, until the chips are melted and the mixture is smooth.
- Stir in the bourbon.
- Allow the mixture to cool slightly, then spread over the chilled cheesecake.
- Drizzle with caramel sauce before serving.
