Heavenly Hibiscus New York Cheesecake with Oreo Crust

Ingredients

Oreo Base

  • 24 Oreo cookies
  • 1/4 cup melted butter

New York-Style Filling

  • 32 oz (4 containers) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1/4 cup heavy cream

Hibiscus Topping

  • 1/2 cup dried hibiscus flowers
  • 1 cup water
  • 1/2 cup sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water (slurry)

Instructions

Oreo Base

  1. Preheat your oven to 325°F (163°C).
  2. In a food processor, pulse the Oreo cookies until finely crushed.
  3. Combine the crushed cookies with the melted butter in a mixing bowl.
  4. Press the mixture firmly into the bottom of a 9-inch springform pan.
  5. Bake the crust for 10 minutes, then let it cool while you prepare the filling.

New York-Style Filling

  1. Increase the oven temperature to 350°F (177°C).
  2. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  3. Add the sugar and mix until well combined.
  4. Blend in the sour cream, followed by the eggs one at a time, beating just until incorporated.
  5. Mix in the vanilla extract, cornstarch, and heavy cream until the batter is smooth.
  6. Pour the filling over the cooled Oreo crust.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.
  8. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for an hour.
  9. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.

Hibiscus Topping

  1. In a small saucepan, bring the hibiscus flowers and water to a boil.
  2. Reduce the heat and simmer for 10 minutes, then strain and discard the flowers.
  3. Return the hibiscus liquid to the saucepan and add the sugar and lemon juice.
  4. Bring to a simmer and stir in the cornstarch slurry to thicken the mixture.
  5. Let the topping cool to room temperature.
  6. Pour the cooled hibiscus topping over the chilled cheesecake.
  7. Refrigerate for an additional hour before serving.
