Heavenly Hibiscus New York Cheesecake with Oreo Crust
Ingredients
Oreo Base
- 24 Oreo cookies
- 1/4 cup melted butter
New York-Style Filling
- 32 oz (4 containers) Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup granulated sugar
- 1 cup sour cream
- 4 large eggs
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- 1/4 cup heavy cream
Hibiscus Topping
- 1/2 cup dried hibiscus flowers
- 1 cup water
- 1/2 cup sugar
- 1 tsp lemon juice
- 1 tbsp cornstarch mixed with 1 tbsp water (slurry)
Instructions
Oreo Base
- Preheat your oven to 325°F (163°C).
- In a food processor, pulse the Oreo cookies until finely crushed.
- Combine the crushed cookies with the melted butter in a mixing bowl.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool while you prepare the filling.
New York-Style Filling
- Increase the oven temperature to 350°F (177°C).
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Add the sugar and mix until well combined.
- Blend in the sour cream, followed by the eggs one at a time, beating just until incorporated.
- Mix in the vanilla extract, cornstarch, and heavy cream until the batter is smooth.
- Pour the filling over the cooled Oreo crust.
- Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for an hour.
- Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.
Hibiscus Topping
- In a small saucepan, bring the hibiscus flowers and water to a boil.
- Reduce the heat and simmer for 10 minutes, then strain and discard the flowers.
- Return the hibiscus liquid to the saucepan and add the sugar and lemon juice.
- Bring to a simmer and stir in the cornstarch slurry to thicken the mixture.
- Let the topping cool to room temperature.
- Pour the cooled hibiscus topping over the chilled cheesecake.
- Refrigerate for an additional hour before serving.
