Balsamic Strawberry Cheesecake with Peach-Mango Delight

Ingredients

Graham Cracker Base

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter

Balsamic & Strawberry Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup balsamic vinegar
  • 1 cup chopped strawberries

Peach & Mango Topping

  • 2 cups peeled and sliced peaches
  • 1 cup peeled and diced mango
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions

Graham Cracker Base

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the Graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to pack it tightly.
  4. Bake for 10 minutes, then remove from oven and let cool while preparing the filling.

Balsamic & Strawberry Filling

  1. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  2. Add the granulated sugar, and mix until fully combined.
  3. Beat in the eggs one at a time, ensuring each egg is thoroughly mixed in before adding the next.
  4. Mix in the vanilla extract and balsamic vinegar until smooth and well-blended.
  5. Gently fold in the chopped strawberries.
  6. Pour the filling over the cooled Graham cracker base.
  7. Bake for 55-60 minutes, or until the center is almost set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake sit in the oven with the door slightly open for about an hour.
  9. Refrigerate the cheesecake for at least 4 hours or overnight for best results.

Peach & Mango Topping

  1. In a medium saucepan, combine the sliced peaches, diced mango, granulated sugar, and lemon juice.
  2. Cook over medium heat until the fruit is tender and the juices have thickened, about 10-15 minutes.
  3. Let the mixture cool to room temperature.
  4. Once cooled, spread the peach and mango topping evenly over the chilled cheesecake.

Final Assembly

  1. Remove the cheesecake from the springform pan and place it on a serving platter.
  2. Slice and serve, enjoying the delightful combination of balsamic & strawberry filling with peach & mango topping!
