Balsamic Strawberry Cheesecake with Peach-Mango Delight
Ingredients
Graham Cracker Base
- 1 1/2 cups Graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
Balsamic & Strawberry Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup balsamic vinegar
- 1 cup chopped strawberries
Peach & Mango Topping
- 2 cups peeled and sliced peaches
- 1 cup peeled and diced mango
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions
Graham Cracker Base
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the Graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to pack it tightly.
- Bake for 10 minutes, then remove from oven and let cool while preparing the filling.
Balsamic & Strawberry Filling
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add the granulated sugar, and mix until fully combined.
- Beat in the eggs one at a time, ensuring each egg is thoroughly mixed in before adding the next.
- Mix in the vanilla extract and balsamic vinegar until smooth and well-blended.
- Gently fold in the chopped strawberries.
- Pour the filling over the cooled Graham cracker base.
- Bake for 55-60 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven and let the cheesecake sit in the oven with the door slightly open for about an hour.
- Refrigerate the cheesecake for at least 4 hours or overnight for best results.
Peach & Mango Topping
- In a medium saucepan, combine the sliced peaches, diced mango, granulated sugar, and lemon juice.
- Cook over medium heat until the fruit is tender and the juices have thickened, about 10-15 minutes.
- Let the mixture cool to room temperature.
- Once cooled, spread the peach and mango topping evenly over the chilled cheesecake.
Final Assembly
- Remove the cheesecake from the springform pan and place it on a serving platter.
