Heavenly Mocha Cinnamon Cheesecake

Ingredients

Cinnamon Roll Base

  • 1 cup ground cinnamon graham crackers
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, melted

Cream Cheese Filling

  • 24 oz (3 containers) of Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 tbsp all-purpose flour

Mocha Latte Topping

  • 1 cup heavy whipping cream
  • 2 tbsp instant coffee granules
  • 1/4 cup powdered sugar
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract

Instructions

1. Prepare the Cinnamon Roll Base

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground cinnamon graham crackers, granulated sugar, and cinnamon.
  3. Pour the melted butter into the mixture and stir until well combined.
  4. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
  5. Bake for 10 minutes and then remove from the oven and let it cool.

2. Make the Cream Cheese Filling

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Mix in the vanilla extract and sour cream until fully incorporated.
  4. Sift in the flour and mix until just combined.
  5. Pour the cream cheese mixture over the cooled cinnamon roll base.
  6. Bake for 50-60 minutes, or until the center is set and the top is lightly golden.
  7. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
  8. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

3. Prepare the Mocha Latte Topping

  1. In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water.
  2. In a mixing bowl, whisk the heavy whipping cream until it starts to thicken.
  3. Add the powdered sugar, cocoa powder, and vanilla extract, and continue to whisk until stiff peaks form.
  4. Carefully fold in the dissolved coffee mixture.

4. Assemble the Cheesecake

  1. Once the cheesecake is fully chilled, spread the mocha latte topping over the top of the cheesecake in an even layer.
  2. Smooth the top with a spatula and dust lightly with additional cocoa powder if desired.
  3. Serve immediately or store in the refrigerator until ready to serve.
