Heavenly Mocha Cinnamon Cheesecake
Ingredients
Cinnamon Roll Base
- 1 cup ground cinnamon graham crackers
- 1/4 cup granulated sugar
- 1 tsp cinnamon
- 1/2 cup unsalted butter, melted
Cream Cheese Filling
- 24 oz (3 containers) of Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup sour cream
- 2 tbsp all-purpose flour
Mocha Latte Topping
- 1 cup heavy whipping cream
- 2 tbsp instant coffee granules
- 1/4 cup powdered sugar
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
Instructions
1. Prepare the Cinnamon Roll Base
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the ground cinnamon graham crackers, granulated sugar, and cinnamon.
- Pour the melted butter into the mixture and stir until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
- Bake for 10 minutes and then remove from the oven and let it cool.
2. Make the Cream Cheese Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract and sour cream until fully incorporated.
- Sift in the flour and mix until just combined.
- Pour the cream cheese mixture over the cooled cinnamon roll base.
- Bake for 50-60 minutes, or until the center is set and the top is lightly golden.
- Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
3. Prepare the Mocha Latte Topping
- In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water.
- In a mixing bowl, whisk the heavy whipping cream until it starts to thicken.
- Add the powdered sugar, cocoa powder, and vanilla extract, and continue to whisk until stiff peaks form.
- Carefully fold in the dissolved coffee mixture.
4. Assemble the Cheesecake
- Once the cheesecake is fully chilled, spread the mocha latte topping over the top of the cheesecake in an even layer.
- Smooth the top with a spatula and dust lightly with additional cocoa powder if desired.
- Serve immediately or store in the refrigerator until ready to serve.
