Decadent Harmony Cheesecake

Ingredients

Black & White Cookie Base:

  • 12 Black & White cookies, crushed
  • 1/4 cup melted butter

Rose Cheesecake Filling:

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons rose water
  • 1/2 cup sour cream

Peanut Butter Cup Topping:

  • 1 cup heavy cream
  • 1 cup smooth peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chopped peanut butter cups, for garnish

Instructions

Prepare the Base:

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine crushed Black & White cookies and melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.

Make the Rose Cheesecake Filling:

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  2. Add the granulated sugar and mix until well combined.
  3. Mix in the eggs one at a time, making sure each one is fully incorporated before adding the next.
  4. Stir in the vanilla extract, rose water, and sour cream until the mixture is smooth.
  5. Pour the filling over the prepared cookie base in the springform pan.

Bake the Cheesecake:

  1. Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.
  2. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour to prevent cracking.
  3. Remove from the oven and let it cool completely on a wire rack. Refrigerate for at least 4 hours, preferably overnight.

Prepare the Peanut Butter Cup Topping:

  1. In a medium saucepan, combine heavy cream, peanut butter, powdered sugar, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture is smooth and well combined.
  2. Remove from heat and let the mixture cool slightly.
  3. Spread the peanut butter topping over the chilled cheesecake.
  4. Garnish with chopped peanut butter cups.

Serving
