Heavenly Delight Cheesecake

Ingredients

Vanilla Wafer Base

  • 2 cups crushed vanilla wafers
  • 1/4 cup sugar
  • 1/2 cup melted butter

Avocado & Lime Filling

  • 16 oz **Norman's Kosher Cholov Yisroel Cream Cheese** (2 containers)
  • 3 ripe avocados, mashed
  • 3/4 cup sugar
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract

Espresso & Chocolate Topping

  • 1/2 cup heavy cream
  • 1 tablespoon instant espresso powder
  • 4 oz semi-sweet chocolate, chopped
  • 1 tablespoon sugar

Instructions

Vanilla Wafer Base

  1. Preheat oven to 325°F (163°C).
  2. In a medium bowl, combine crushed vanilla wafers, sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes. Remove from oven and allow to cool while preparing the filling.

Avocado & Lime Filling

  1. In a large bowl, beat the **Norman's Kosher Cholov Yisroel Cream Cheese** and sugar until creamy and smooth.
  2. Add the mashed avocados, fresh lime juice, lime zest, and vanilla extract. Mix until fully incorporated.
  3. Add the eggs one at a time, beating well after each addition.
  4. Pour the filling over the cooled Vanilla Wafer Base in the springform pan.
  5. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  6. Turn off the oven, crack the oven door, and let the cheesecake cool slowly in the oven for 1 hour.
  7. Transfer to the refrigerator and chill for at least 4 hours or overnight.

Espresso & Chocolate Topping

  1. In a small saucepan, heat the heavy cream and espresso powder over medium heat until it begins to simmer.
  2. Remove from heat and add the chopped semi-sweet chocolate and sugar. Stir until the chocolate is melted and the mixture is smooth.
  3. Allow the topping to cool slightly.
  4. Pour the Espresso & Chocolate Topping over the chilled cheesecake, spreading it evenly over the top.
  5. Return the cheesecake to the refrigerator and chill for an additional 1 hour before serving.
