Heavenly New York Cherry Cheesecake
Ingredients
Vanilla Wafer Base
- 1 1/2 cups vanilla wafer crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
New York-Style Filling
- 32 oz cream cheese (Norman's Kosher Cholov Yisroel Cream Cheese), softened (4 containers)
- 1 1/4 cups granulated sugar
- 3/4 cup sour cream
- 2 teaspoons vanilla extract
- 4 large eggs
Whipped Cream & Cherry Topping
- 1 cup heavy whipping cream, chilled
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 jar maraschino cherries, drained
Instructions
Preparation
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
Vanilla Wafer Base
- In a medium bowl, combine the vanilla wafer crumbs and granulated sugar.
- Add the melted butter and mix until well combined.
- Press the mixture evenly into the bottom of the prepared springform pan.
- Bake for 10 minutes, then set aside to cool while you prepare the filling.
New York-Style Filling
- In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Gradually add the granulated sugar, beating until light and fluffy.
- Mix in the sour cream and vanilla extract until just combined.
- Add the eggs one at a time, beating on low speed after each addition until just blended. Do not overmix.
- Pour the filling into the cooled crust.
- Bake for 55-65 minutes, or until the center is set and a toothpick inserted into the middle comes out mostly clean.
- Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
Whipped Cream & Cherry Topping
- In a mixing bowl, whisk together the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream optionally over the chilled cheesecake or pipe decorative dollops around the edges.
- Place maraschino cherries on top of the whipped cream.
Serving
- Run a knife around the edge of the springform pan before releasing the sides.
- Slice and serve chilled.
