Pistachio Dream Cheesecake
Ingredients
For the Pistachio Crumble Base:
- 1 cup pistachios, shelled and finely ground
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Plain Filling:
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/3 cup sour cream
- 1/3 cup heavy cream
For the Whipped Cream Topping:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
Preparing the Pistachio Crumble Base:
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the finely ground pistachios, graham cracker crumbs, and granulated sugar.
- Add the melted butter and mix until the mixture is well combined and resembles wet sand.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then remove from the oven and let cool while preparing the filling.
Making the Plain Filling:
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
- Add the vanilla extract and mix until fully incorporated.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the sour cream and heavy cream until the batter is smooth.
- Pour the filling over the cooled pistachio crumble base and smooth the top.
- Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Preparing the Whipped Cream Topping:
- In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Spread the whipped cream evenly over the chilled cheesecake, or pipe it decoratively if desired.
Serving
- Carefully remove the cheesecake from the springform pan and transfer it to a serving platter.
- Slice and serve chilled. Enjoy!
