Pistachio Dream Cheesecake

Ingredients

For the Pistachio Crumble Base:

  • 1 cup pistachios, shelled and finely ground
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Plain Filling:

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/3 cup sour cream
  • 1/3 cup heavy cream

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

Preparing the Pistachio Crumble Base:

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the finely ground pistachios, graham cracker crumbs, and granulated sugar.
  3. Add the melted butter and mix until the mixture is well combined and resembles wet sand.
  4. Press the mixture evenly into the bottom of a 9-inch springform pan.
  5. Bake for 10 minutes, then remove from the oven and let cool while preparing the filling.

Making the Plain Filling:

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
  2. Add the vanilla extract and mix until fully incorporated.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the sour cream and heavy cream until the batter is smooth.
  5. Pour the filling over the cooled pistachio crumble base and smooth the top.
  6. Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  8. Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Preparing the Whipped Cream Topping:

  1. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  2. Spread the whipped cream evenly over the chilled cheesecake, or pipe it decoratively if desired.

Serving

  1. Carefully remove the cheesecake from the springform pan and transfer it to a serving platter.
  2. Slice and serve chilled. Enjoy!
