Strawberry Balsamic Dream Cheesecake with Basbousa Base and Candied Pecans

Ingredients

Basbousa Base

  • 1 cup semolina
  • 1/2 cup granulated sugar
  • 1 cup plain yogurt
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup melted butter
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract

Balsamic & Strawberry Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup balsamic vinegar
  • 1 cup strawberries, hulled and chopped

Candied Pecans Topping

  • 1 cup pecans
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 2 tbsp water

Instructions

Basbousa Base

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, combine semolina, sugar, yogurt, coconut, melted butter, baking powder, and vanilla extract.
  3. Spread the mixture evenly in the prepared pan and bake for 20 minutes. Set aside to cool while you prepare the filling.

Balsamic & Strawberry Filling

  1. Reduce the oven to 325°F (163°C).
  2. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  3. Add sugar and beat until well combined, then add eggs one at a time, mixing well after each addition.
  4. Mix in the vanilla extract, sour cream, and heavy cream until smooth and creamy.
  5. Gently fold in the balsamic vinegar and chopped strawberries.
  6. Pour the filling over the cooled basbousa base and smooth the top.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly open.
  9. Refrigerate for at least 4 hours, preferably overnight.

Candied Pecans Topping

  1. In a medium skillet, combine pecans, sugar, cinnamon, and water.
  2. Cook over medium heat, stirring constantly, until the sugar dissolves and coats the pecans, about 5-7 minutes.
  3. Spread the pecans on a parchment-lined baking sheet to cool.

Assembly

  1. Once the cheesecake is fully chilled, remove it from the springform pan and place it on a serving plate.
  2. Top with candied pecans, arranging them evenly over the surface.
