Strawberry Balsamic Dream Cheesecake with Basbousa Base and Candied Pecans
Ingredients
Basbousa Base
- 1 cup semolina
- 1/2 cup granulated sugar
- 1 cup plain yogurt
- 1/2 cup unsweetened shredded coconut
- 1/2 cup melted butter
- 1 tsp baking powder
- 1/2 tsp vanilla extract
Balsamic & Strawberry Filling
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers)
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup balsamic vinegar
- 1 cup strawberries, hulled and chopped
Candied Pecans Topping
- 1 cup pecans
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 2 tbsp water
Instructions
Basbousa Base
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a large bowl, combine semolina, sugar, yogurt, coconut, melted butter, baking powder, and vanilla extract.
- Spread the mixture evenly in the prepared pan and bake for 20 minutes. Set aside to cool while you prepare the filling.
Balsamic & Strawberry Filling
- Reduce the oven to 325°F (163°C).
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add sugar and beat until well combined, then add eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract, sour cream, and heavy cream until smooth and creamy.
- Gently fold in the balsamic vinegar and chopped strawberries.
- Pour the filling over the cooled basbousa base and smooth the top.
- Bake for 55-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly open.
- Refrigerate for at least 4 hours, preferably overnight.
Candied Pecans Topping
- In a medium skillet, combine pecans, sugar, cinnamon, and water.
- Cook over medium heat, stirring constantly, until the sugar dissolves and coats the pecans, about 5-7 minutes.
- Spread the pecans on a parchment-lined baking sheet to cool.
Assembly
- Once the cheesecake is fully chilled, remove it from the springform pan and place it on a serving plate.
- Top with candied pecans, arranging them evenly over the surface.
