Mango Delight Cheesecake with Oreo Base and Cheesecake Truffle Topping
Ingredients
Oreo Base
- 24 Oreo cookies
- 5 tablespoons unsalted butter, melted
Mango Filling
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers)
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh mango puree (about 2-3 ripe mangoes)
- 3 large eggs
- 1/4 cup heavy cream
Cheesecake Truffle Topping
- 8 oz Norman's Kosher Cholov Yisroel Cream Cheese (1 container)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed Oreos
Instructions
Oreo Base
- Preheat your oven to 325°F (163°C).
- Crush the Oreo cookies in a food processor until they are fine crumbs.
- Mix the Oreo crumbs with the melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
- Bake the crust for 10 minutes, then let it cool while you prepare the filling.
Mango Filling
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth.
- Add in the vanilla extract and mango puree, and mix until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the heavy cream until the batter is smooth and creamy.
- Pour the mango filling over the cooled Oreo base.
- Bake the cheesecake for 55-60 minutes, or until the center is almost set.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
Cheesecake Truffle Topping
- In a medium mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and powdered sugar together until smooth and creamy.
- Mix in the vanilla extract until well combined.
- Fold in the crushed Oreos until evenly distributed.
- Once the cheesecake has chilled, spread the truffle mixture evenly over the top.
Serving
- Carefully remove the cheesecake from the springform pan and place it on a serving platter.
