Mango Delight Cheesecake with Oreo Base and Cheesecake Truffle Topping

Ingredients

Oreo Base

  • 24 Oreo cookies
  • 5 tablespoons unsalted butter, melted

Mango Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers)
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh mango puree (about 2-3 ripe mangoes)
  • 3 large eggs
  • 1/4 cup heavy cream

Cheesecake Truffle Topping

  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese (1 container)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed Oreos

Instructions

Oreo Base

  1. Preheat your oven to 325°F (163°C).
  2. Crush the Oreo cookies in a food processor until they are fine crumbs.
  3. Mix the Oreo crumbs with the melted butter until well combined.
  4. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
  5. Bake the crust for 10 minutes, then let it cool while you prepare the filling.

Mango Filling

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth.
  2. Add in the vanilla extract and mango puree, and mix until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the heavy cream until the batter is smooth and creamy.
  5. Pour the mango filling over the cooled Oreo base.
  6. Bake the cheesecake for 55-60 minutes, or until the center is almost set.
  7. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.

Cheesecake Truffle Topping

  1. In a medium mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and powdered sugar together until smooth and creamy.
  2. Mix in the vanilla extract until well combined.
  3. Fold in the crushed Oreos until evenly distributed.
  4. Once the cheesecake has chilled, spread the truffle mixture evenly over the top.

Serving

  1. Carefully remove the cheesecake from the springform pan and place it on a serving platter.
