Apple Delight Cheesecake with Granola & Maple Filling and Pineapple & Kiwi Topping

Ingredients

For the Apple Pie Base:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 cup apple pie filling

For the Granola & Maple Filling:

  • 16 ounces (2 containers) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granola

For the Pineapple & Kiwi Topping:

  • 1 cup pineapple chunks
  • 2 kiwis, peeled and sliced
  • 1/4 cup apricot jam

Instructions

1. Prepare the Apple Pie Base:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and ground cinnamon. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Spread the apple pie filling evenly over the crust.

2. Make the Granola & Maple Filling:

  1. In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  2. Add the granulated sugar and maple syrup, and mix until well combined.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Stir in the vanilla extract and granola.
  5. Pour the filling over the prepared apple pie base.

3. Bake the Cheesecake:

  1. Bake in the preheated oven for 50-60 minutes, or until the center is set and the top is lightly golden.
  2. Remove from the oven and allow to cool to room temperature.
  3. Refrigerate for at least 4 hours, or overnight for best results.

4. Prepare the Pineapple & Kiwi Topping:

  1. In a small saucepan, warm the apricot jam over low heat until it becomes liquid.
  2. Arrange the pineapple chunks and kiwi slices on top of the chilled cheesecake.
  3. Brush the warmed apricot jam over the fruits to create a shiny glaze.

5. Serve:

  1. Carefully remove the cheesecake from the springform pan.
