Heavenly Cookies & Cream Delight Cheesecake
Ingredients
Buttermilk Biscuit Base
- 1 1/2 cups crushed buttermilk biscuits
- 1/4 cup melted butter
- 2 tablespoons granulated sugar
Cookies & Cream Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 1/2 cups crushed chocolate sandwich cookies (such as Oreos)
Chocolate Ganache Topping
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
Buttermilk Biscuit Base
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed buttermilk biscuits, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of the prepared springform pan to create an even layer.
- Bake in the preheated oven for 10 minutes, then remove and let cool slightly.
Cookies & Cream Filling
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
- Add the sour cream and vanilla extract, beating until fully incorporated.
- Add the eggs one at a time, beating after each addition until just combined.
- Gently fold in the crushed chocolate sandwich cookies until evenly distributed throughout the batter.
- Pour the filling over the cooled buttermilk biscuit base, spreading it evenly.
- Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set and the edges are lightly browned.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
Chocolate Ganache Topping
- In a microwave-safe bowl, heat the chocolate chips and heavy cream together in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
- Stir in the vanilla extract until well combined.
- Let the ganache cool slightly, then pour it over the chilled cheesecake, spreading it evenly over the top.
- Refrigerate for an additional 30 minutes to set the ganache.
Serving
