Heavenly Cookies & Cream Delight Cheesecake

Ingredients

Buttermilk Biscuit Base

  • 1 1/2 cups crushed buttermilk biscuits
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

Cookies & Cream Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/2 cups crushed chocolate sandwich cookies (such as Oreos)

Chocolate Ganache Topping

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

Buttermilk Biscuit Base

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the crushed buttermilk biscuits, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared springform pan to create an even layer.
  4. Bake in the preheated oven for 10 minutes, then remove and let cool slightly.

Cookies & Cream Filling

  1. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth and creamy.
  2. Add the sour cream and vanilla extract, beating until fully incorporated.
  3. Add the eggs one at a time, beating after each addition until just combined.
  4. Gently fold in the crushed chocolate sandwich cookies until evenly distributed throughout the batter.
  5. Pour the filling over the cooled buttermilk biscuit base, spreading it evenly.
  6. Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set and the edges are lightly browned.
  7. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Chocolate Ganache Topping

  1. In a microwave-safe bowl, heat the chocolate chips and heavy cream together in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  2. Stir in the vanilla extract until well combined.
  3. Let the ganache cool slightly, then pour it over the chilled cheesecake, spreading it evenly over the top.
  4. Refrigerate for an additional 30 minutes to set the ganache.

Serving

Carefully remove the cheesecake from the springform pan and transfer to a serving plate. Slice and enjoy your Heavenly Cookies & Cream Delight Cheesecake!
