Sunshine Bliss Cheesecake with Lemon Bar Base and Balsamic Strawberry Filling

Ingredients

For the Lemon Bar Base:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons lemon zest
  • 1/2 cup unsalted butter, melted

For the Balsamic & Strawberry Filling:

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese (3 containers), softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup balsamic reduction (store-bought or homemade)
  • 1 cup fresh strawberries, hulled and chopped

For the Peach & Mango Topping:

  • 2 ripe peaches, peeled and sliced
  • 1 ripe mango, peeled and diced
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Directions

Preparing the Lemon Bar Base:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, sugar, salt, and lemon zest.
  3. Pour in the melted butter and stir until combined.
  4. Press the mixture evenly into the bottom of a springform pan.
  5. Bake for 15-18 minutes or until lightly golden. Allow to cool while you prepare the filling.

Making the Balsamic & Strawberry Filling:

  1. Reduce oven temperature to 325°F (163°C).
  2. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  3. Add the sugar and blend until well combined.
  4. Mix in eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Stir in the vanilla extract and sour cream.
  6. Gently fold in the balsamic reduction and chopped strawberries.
  7. Pour the batter over the cooled lemon bar base.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven, crack the door open, and let the cheesecake cool gradually for about an hour.
  10. Transfer to the refrigerator to chill for at least 4 hours, preferably overnight.

Adding the Peach & Mango Topping:

  1. In a medium bowl, combine the sliced peaches, diced mango, honey, and lemon juice. Toss until the fruit is evenly coated.
  2. Arrange the fruit mixture evenly over the chilled cheesecake before serving.
