Elegant Garden Cheesecake

Smoked Gouda & Chive Base

  • 1 ½ cups graham cracker crumbs
  • ½ cup grated smoked Gouda cheese
  • 2 tablespoons chopped fresh chives
  • ⅓ cup melted butter

Directions:

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, smoked Gouda cheese, and chopped chives.
  3. Add the melted butter and mix until well combined.
  4. Press the mixture into the bottom of a 9-inch springform pan.
  5. Bake in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.

Olive Oil & Lemon Filling

  • 24 oz (3 containers) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup sugar
  • 1 cup sour cream
  • 1/4 cup extra virgin olive oil
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 3 large eggs
  • 1 teaspoon vanilla extract

Directions:

  1. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth and creamy.
  2. Add the sour cream, olive oil, lemon zest, and lemon juice, and mix until well combined.
  3. Add eggs, one at a time, beating well after each addition.
  4. Mix in the vanilla extract.
  5. Pour the filling over the cooled crust in the springform pan.
  6. Bake at 325°F (160°C) for 50-60 minutes, or until the center is just set and slightly jiggly.
  7. Turn off the oven and let the cheesecake cool inside the oven with the door slightly open for 1 hour.
  8. Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.

Peach & Mango Topping

  • 2 ripe peaches, peeled, pitted, and sliced
  • 1 ripe mango, peeled, pitted, and sliced
  • ¼ cup sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice

Directions:

  1. In a saucepan, combine peaches, mango, sugar, water, and lemon juice.
  2. Cook over medium heat until the fruit is tender and the mixture has thickened, about 10-15 minutes.
  3. Let the fruit mixture cool to room temperature.
  4. Spread the cooled peach and mango topping over the chilled cheesecake.
  5. Refrigerate the cheesecake for another 30 minutes before serving to set the topping.
