In a food processor, blend granola, walnuts, dates, melted butter, and sugar to form the base mixture. Press this mixture into the bottom of a springform pan.
In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, maple syrup, and vanilla extract until smooth. Pour this filling over the base in the pan.
Bake in the preheated oven for 40-45 minutes or until the cheesecake is set.
Let the cheesecake cool completely, then chill in the refrigerator for at least 4 hours.
Sprinkle chopped macadamia nuts on top of the chilled cheesecake before serving.
