Avocado Lime Dream Cheesecake

Ingredients:

  • Shortbread base:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup unsalted butter, melted
  • Avocado & Lime filling:
    • 2 ripe avocados, peeled and pitted
    • 1/2 cup lime juice
    • 1/2 cup sugar
    • Norman's Kosher Cholov Yisroel Cream Cheese (two 8oz containers)
  • Lemon Curd topping:
    • 1 cup sugar
    • 1/4 cup unsalted butter
    • 3 large eggs
    • 1/2 cup fresh lemon juice
    • 2 tablespoons lemon zest

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter for the shortbread base. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let it cool.
  3. In a food processor, blend avocados, lime juice, sugar, and Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Pour over the cooled crust.
  4. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  5. For the lemon curd topping, whisk sugar, butter, eggs, lemon juice, and zest in a saucepan over medium heat until thickened. Let it cool, then spread over the chilled cheesecake.
  6. Refrigerate the cheesecake again for another 2 hours before serving. Enjoy your Avocado Lime Dream Cheesecake!
