Whiskey Chocolate Explosion Cheesecake

Ingredients:

  • Pistachio Crumble Base:
  • - 1 1/2 cups crushed graham crackers
  • - 1/2 cup shelled and chopped pistachios
  • - 1/4 cup melted unsalted butter

  • Whiskey & Chocolate Filling:
  • - 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • - 1 cup granulated sugar
  • - 3/4 cup cocoa powder
  • - 4 large eggs
  • - 1/4 cup whiskey

  • Blood Orange & Grapefruit Topping:
  • - 2 blood oranges
  • - 2 grapefruits
  • - 1/4 cup sugar
  • - 1 tablespoon cornstarch

Instructions:

  1. Pistachio Crumble Base:
  2. - Preheat the oven to 350°F (175°C).
  3. - In a mixing bowl, combine the crushed graham crackers, chopped pistachios, and melted butter. Mix until well combined.
  4. - Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  5. - Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside to cool.

  6. Whiskey & Chocolate Filling:
  7. - In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until creamy and smooth.
  8. - Gradually add the cocoa powder and mix until well incorporated.
  9. - Add the eggs, one at a time, beating well after each addition.
  10. - Stir in the whiskey until combined.
  11. - Pour the filling over the cooled pistachio crumble base.

  12. Blood Orange & Grapefruit Topping:
  13. - Juice the blood oranges and grapefruits into a saucepan.
  14. - In a small bowl, whisk together the sugar and cornstarch. Add the mixture to the citrus juice in the saucepan.
  15. - Cook the mixture over medium heat, stirring continuously, until it thickens into a syrup-like consistency.
  16. - Remove from heat and let it cool for a few minutes.
  17. - Pour the prepared topping over the whiskey chocolate filling in the springform pan.

  18. - Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set.
  19. - When ready to serve, loosen the edges of the cheesecake by running a knife around the inside of the springform pan.
  20. - Remove the sides of the pan and transfer the cheesecake to a serving plate.
  21. - Slice and enjoy the indulgent Whiskey Chocolate Explosion Cheesecake!
