Banana Nut Delight Cheesecake
Ingredients:
1⅓ cups crushed banana nut cookies
5 tablespoons melted unsalted butter
1 container of Norman's Kosher Cholov Yisroel Cream Cheese (8oz)
⅓ cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
2 eggs
1 cup granola
⅓ cup maple syrup
1 cup mixed berries
½ cup heavy cream
Instructions:
Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
In a mixing bowl, combine the crushed banana nut cookies with melted butter. Press the mixture evenly into the bottom of the prepared pan to form the crust.
In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, flour, and vanilla extract until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Pour the cream cheese mixture over the crust in the pan.
In a separate bowl, mix the granola and maple syrup together. Sprinkle this mixture evenly over the cream cheese filling.
Bake for 45-50 minutes, or until the center is set. Remove from the oven and let it cool for 10 minutes.
After cooling, carefully remove the springform sides. Let the cheesecake cool completely before refrigerating for at least 2 hours.
Before serving, carefully arrange the mixed berries on top of the cooled cheesecake.
In a separate bowl, whip the heavy cream until it thickens. Dollop or pipe the whipped cream around the edges of the cheesecake.
