A Taste of Maple Cheesecake

Ingredients:

  • 1 1/2 cups Vanilla wafer crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups granola
  • 3 tablespoons maple syrup
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup maple syrup
  • 1 teaspoon cornstarch
  • 1 cup whipped cream, for topping

Instructions:

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the vanilla wafer crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate bowl, mix together the granola and 3 tablespoons of maple syrup. Spread the granola evenly over the crust.
  4. In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  5. Add the sugar and vanilla extract to the cream cheese and continue beating until well combined.
  6. Beat in the eggs, one at a time, until fully incorporated.
  7. In a small bowl, whisk together the heavy cream, 1/4 cup maple syrup, and cornstarch until smooth. Gradually pour the mixture into the cream cheese batter while continuing to beat on low speed.
  8. Pour the batter over the granola layer in the springform pan.
  9. Bake in the preheated oven for 60-70 minutes, or until the edges are set but the center is slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
  11. Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
  12. Before serving, spread whipped cream over the top of the cheesecake. Optional: drizzle with additional maple syrup for extra flavor.
