A Taste of Maple Cheesecake
Ingredients:
- 1 1/2 cups Vanilla wafer crumbs
- 1/4 cup unsalted butter, melted
- 2 cups granola
- 3 tablespoons maple syrup
- 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup maple syrup
- 1 teaspoon cornstarch
- 1 cup whipped cream, for topping
Instructions:
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine the vanilla wafer crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate bowl, mix together the granola and 3 tablespoons of maple syrup. Spread the granola evenly over the crust.
- In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Add the sugar and vanilla extract to the cream cheese and continue beating until well combined.
- Beat in the eggs, one at a time, until fully incorporated.
- In a small bowl, whisk together the heavy cream, 1/4 cup maple syrup, and cornstarch until smooth. Gradually pour the mixture into the cream cheese batter while continuing to beat on low speed.
- Pour the batter over the granola layer in the springform pan.
- Bake in the preheated oven for 60-70 minutes, or until the edges are set but the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
- Before serving, spread whipped cream over the top of the cheesecake. Optional: drizzle with additional maple syrup for extra flavor.
