Triple Delight Cheesecake

Ingredients:

  • Oatmeal Raisin Base:
    • 1 ½ cups oatmeal
    • 1 cup raisins
    • ½ cup unsalted butter, melted
    • ¼ cup brown sugar
  • Strawberry Filling:
    • 16 oz strawberries, hulled and sliced
    • ½ cup granulated sugar
    • 2 tablespoons cornstarch
    • 2 tablespoons lemon juice
  • Peach & Mango Topping:
    • 2 large peaches, peeled and sliced
    • 1 large mango, peeled and diced
    • ¼ cup granulated sugar
    • 1 tablespoon lemon juice
  • Cheesecake Filling:
    • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 4 large eggs

Instructions:

  1. Preheat your oven to 325°F (162°C).
  2. For the oatmeal raisin base:
    • In a medium bowl, combine the oatmeal, raisins, melted butter, and brown sugar. Mix until well combined.
    • Press the mixture evenly into the bottom of a greased 9-inch springform pan. Set aside.
  3. For the strawberry filling:
    • In a saucepan, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice.
    • Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries release their juices. Remove from heat.
    • Pour the strawberry filling over the oatmeal raisin base in the springform pan. Spread it evenly.
  4. For the peach & mango topping:
    • In a separate bowl, gently toss the sliced peaches, diced mango, granulated sugar, and lemon juice.
    • Evenly distribute the fruit mixture over the strawberry filling.
  5. For the cheesecake filling:
    • In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and vanilla extract until smooth and creamy.
    • Add the eggs, one at a time, beating well after each addition.
    • Pour the cheesecake filling over the fruit layers in the springform pan.
  6. Bake the cheesecake in the preheated oven for 1 hour until the center is set.
  7. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the springform pan.
  9. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.
