Triple Delight Cheesecake
Ingredients:
- Oatmeal Raisin Base:
- 1 ½ cups oatmeal
- 1 cup raisins
- ½ cup unsalted butter, melted
- ¼ cup brown sugar
- Strawberry Filling:
- 16 oz strawberries, hulled and sliced
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice
- Peach & Mango Topping:
- 2 large peaches, peeled and sliced
- 1 large mango, peeled and diced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- Cheesecake Filling:
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
Instructions:
- Preheat your oven to 325°F (162°C).
- For the oatmeal raisin base:
- In a medium bowl, combine the oatmeal, raisins, melted butter, and brown sugar. Mix until well combined.
- Press the mixture evenly into the bottom of a greased 9-inch springform pan. Set aside.
- For the strawberry filling:
- In a saucepan, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries release their juices. Remove from heat.
- Pour the strawberry filling over the oatmeal raisin base in the springform pan. Spread it evenly.
- For the peach & mango topping:
- In a separate bowl, gently toss the sliced peaches, diced mango, granulated sugar, and lemon juice.
- Evenly distribute the fruit mixture over the strawberry filling.
- For the cheesecake filling:
- In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, beating well after each addition.
- Pour the cheesecake filling over the fruit layers in the springform pan.
- Bake the cheesecake in the preheated oven for 1 hour until the center is set.
- Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
- Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the springform pan.
- Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.
