Ingredients:

  • 1 1/2 cups of Churro crumbs
  • 1/2 cup of melted butter
  • 2 cups of granola
  • 1/4 cup of pure maple syrup
  • 16 ounces of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs
  • 1 cup of heavy cream
  • 1 cup of whipped cream
  • Additional Churro crumbs for garnish

Instructions:

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, combine the Churro crumbs and melted butter until well mixed. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  3. In another bowl, mix together the granola and maple syrup. Spread the granola mixture evenly over the crust.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract until smooth and creamy.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the heavy cream until fully incorporated.
  6. Pour the cream cheese mixture over the granola layer in the pan.
  7. Bake for 60-70 minutes or until the center is set and the top is lightly golden.
  8. Remove from the oven and let the cheesecake cool completely in the pan on a wire rack.
  9. Once cooled, refrigerate for at least 4 hours or overnight.
  10. Before serving, spread the whipped cream over the top of the cheesecake and garnish with additional Churro crumbs.
