Ingredients:

  • For the Acai Berry Base:

    • 8 ounces of semi-sweet chocolate, melted
    • 1/2 cup of heavy cream
    • 1/4 cup of powdered sugar
    • 1/4 cup of unsweetened cocoa powder
    • 1/4 cup of hot water

Instructions:

  1. Prepare the Acai Berry Base:
    • In a medium bowl, combine the crushed graham crackers, melted butter, sugar, and Acai berry puree. Stir until the mixture resembles wet sand.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
  2. Prepare the Cookies & Cream Filling:
    • In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese
    • with the sugar and vanilla extract until smooth and creamy.
    • Add the eggs, one at a time, beating well after each addition.
    • Fold in the crushed chocolate sandwich cookies until evenly distributed.
    • Pour the filling over the prepared Acai berry base in the springform pan.
    • Smooth the top with a spatula.
  3. Bake and Cool:
    • Preheat the oven to 325°F (163°C).
    • Bake the cheesecake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
    • Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
    • Remove the cheesecake from the oven and let it cool completely on a wire rack.
    • Refrigerate for at least 4 hours, or overnight, to set.
  4. Prepare the Fudge Brownie Topping:
    • In a small saucepan, combine the melted chocolate, heavy cream, powdered sugar, cocoa powder, and hot water.
