Creamy Delights Cheesecake Recipe

Ingredients:

  • 1 1/2 cups Vanilla wafer crumbs
  • 1/3 cup melted unsalted butter
  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese (8oz each), softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon cocoa powder
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 cup heavy cream
  • 1/4 cup Tiramisu liqueur (optional)
  • 1 cup Lemon Curd

Instructions:

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a medium bowl, combine the vanilla wafer crumbs and melted butter until well mixed. Press the mixture onto the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour, mixing until just combined.
  6. Separate the cream cheese mixture into two equal parts.
  7. In one part, add the brewed coffee and cocoa powder. Mix until well combined.
  8. In the other part, add the mascarpone cheese and powdered sugar. Mix until creamy.
  9. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone cheese mixture and set aside.
  10. Pour the coffee-flavored cream cheese mixture over the crust in the prepared pan.
  11. Top with the mascarpone cream mixture, spreading it evenly.
  12. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  13. Remove from the oven and let cool on a wire rack for 10 minutes. Then, run a knife around the edges of the pan to loosen the cheesecake.
  14. Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set.
  15. Prior to serving, spread a layer of Lemon Curd over the top of the cheesecake.
