Creamy Macadamia Delight Cheesecake

Ingredients:

  • 6 oz Shortbread cookies, crushed
  • 4 tbsp Unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup Sugar
  • 3 Eggs
  • 1 tsp Vanilla extract
  • 1 cup Macadamia nuts, chopped
  • 2 tbsp Honey

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed shortbread cookies and melted butter. Mix well until the mixture resembles wet sand.
  3. Press the cookie mixture evenly into the bottom of a greased 9-inch springform pan to form the crust.
  4. In a separate mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Pour the cream cheese mixture over the prepared crust.
  7. Bake in the preheated oven for 45-50 minutes or until the center is set.
  8. While the cheesecake is baking, combine the chopped macadamia nuts and honey in a small bowl. Mix well.
  9. Remove the cheesecake from the oven and let it cool for a few minutes.
  10. Sprinkle the macadamia nut topping evenly over the cheesecake.
  11. Cool the cheesecake completely in the refrigerator for at least 4 hours before serving.
