Citrus Delight Cheesecake

Ingredients:

  • 1 ½ cups of crushed Apple Pie crust
  • 8 tablespoons of melted unsalted butter
  • 3 containers (24oz) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup of granulated sugar
  • 4 large eggs
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of olive oil
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 1 cup of pineapple chunks
  • 1 kiwi, sliced

Instructions:

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the crushed Apple Pie crust and melted unsalted butter. Mix well until the crumbs are evenly coated.
  3. Press the crust mixture firmly onto the bottom of a greased 9-inch springform pan. Set aside.
  4. In a separate mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese containers and granulated sugar until smooth and creamy.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Mix in the vanilla extract, olive oil, lemon zest, and lemon juice until well combined.
  7. Pour the filling over the prepared crust in the springform pan.
  8. Bake in the preheated oven for 55-60 minutes or until the center is set. The edges may have a slight golden color.
  9. Remove from the oven and allow the cheesecake to cool completely in the pan on a wire rack.
  10. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.
  11. Before serving, top the chilled cheesecake with pineapple chunks and sliced kiwi.
