Creamy Pecan Espresso Delight Cheesecake

Ingredients:

  • 1 ½ cups Parmesan & Garlic flavored breadcrumbs
  • ⅓ cup unsalted butter, melted
  • 2 containers (8 oz each) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups finely chopped pecans
  • ½ cup heavy cream
  • 1 tablespoon instant espresso powder
  • ¼ cup hot water
  • 4 oz semi-sweet chocolate, melted

Instructions:

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform cake pan.
  2. In a medium bowl, combine the Parmesan & Garlic flavored breadcrumbs and melted butter. Press the mixture into the bottom of the prepared pan to form an even crust.
  3. In a large mixing bowl, beat together the softened Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Fold in the finely chopped pecans, ensuring they are evenly distributed throughout the batter.
  6. In a separate small bowl, dissolve the instant espresso powder in hot water. Allow it to cool for a few minutes.
  7. In another small bowl, combine the cooled espresso mixture and melted semi-sweet chocolate. Stir until smooth.
  8. Gradually add the heavy cream to the chocolate-espresso mixture, stirring until well combined.
  9. Pour the cream cheese and pecan filling over the prepared crust in the cake pan, spreading it out evenly.
  10. Drizzle the espresso-chocolate mixture over the top of the cream cheese filling, creating a marbled effect.
  11. Bake in the preheated oven for 55-60 minutes or until the center is set and slightly jiggles when gently shaken.
  12. Remove the cheesecake from the oven and allow it to cool completely in the pan on a wire rack.
  13. Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight, to firm up.
  14. Before serving, run a knife around the edge of the cake pan to loosen the cheesecake, then release the springform sides.
  15. Slice and serve this creamy, nutty and decadent Pecan Espresso Delight Cheesecake as desired.
