Ingredients:

  • 1 1/2 cups Parmesan cheese, shredded
  • 1/2 cup breadcrumbs
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 containers (16oz each) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 chocolate sandwich cookies, crushed
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1 cup canned peaches, diced
  • 1 cup fresh mango, diced

Instructions:

  1. Preheat the oven to 325°F.
  2. In a mixing bowl, combine Parmesan cheese, breadcrumbs, melted butter, and minced garlic. Press the mixture onto the bottom of a greased 9-inch springform pan to form the crust.
  3. In a separate mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Gently stir in the crushed chocolate sandwich cookies.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set.
  8. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  9. In a chilled mixing bowl, beat the whipping cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled cheesecake.
  10. In a bowl, combine diced peaches and mango. Spoon the fruit mixture over the whipped cream.
  11. Slice and serve the Heavenly Delight Cheesecake chilled, and enjoy!
