Ashira's Dreamy Delight Cheesecake
Ingredients:
- Pistachio Crumble Base:
- - 1 ½ cups crushed graham crackers
- - ½ cup chopped pistachios
- - ⅓ cup melted butter
- Coconut Milk & Chia Seeds Filling:
- - 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese
- - 1 cup coconut milk
- - ½ cup granulated sugar
- - 2 tablespoons cornstarch
- - 2 teaspoons vanilla extract
- - 4 tablespoons chia seeds
- Mocha Latte Topping:
- - 1 cup heavy cream
- - 2 tablespoons instant coffee granules
- - 2 tablespoons cocoa powder
- - 2 tablespoons powdered sugar
Instructions:
- Pistachio Crumble Base:
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers, chopped pistachios, and melted butter until well combined.
- Press the mixture onto the bottom of a 9-inch springform pan to form an even crust.
- Bake for 10 minutes. Remove from the oven and let it cool completely.
- Coconut Milk & Chia Seeds Filling:
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
- Add the coconut milk, granulated sugar, cornstarch, and vanilla extract. Beat until smooth.
- Stir in the chia seeds until evenly distributed.
- Pour the filling over the cooled pistachio crumble base.
- Refrigerate for at least 4 hours or until set.
- Mocha Latte Topping:
- In a mixing bowl, combine the heavy cream, instant coffee granules, cocoa powder, and powdered sugar.
- Using an electric mixer, whip the mixture until stiff peaks form.
- Spread the mocha latte topping over the chilled cheesecake.
- Refrigerate for an additional hour to let the topping set.
