Ashira's Dreamy Delight Cheesecake

Ingredients:

  • Pistachio Crumble Base:
  • - 1 ½ cups crushed graham crackers
  • - ½ cup chopped pistachios
  • - ⅓ cup melted butter
  • Coconut Milk & Chia Seeds Filling:
  • - 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese
  • - 1 cup coconut milk
  • - ½ cup granulated sugar
  • - 2 tablespoons cornstarch
  • - 2 teaspoons vanilla extract
  • - 4 tablespoons chia seeds
  • Mocha Latte Topping:
  • - 1 cup heavy cream
  • - 2 tablespoons instant coffee granules
  • - 2 tablespoons cocoa powder
  • - 2 tablespoons powdered sugar

Instructions:

  1. Pistachio Crumble Base:
  2. Preheat the oven to 350°F (175°C).
  3. In a bowl, mix the crushed graham crackers, chopped pistachios, and melted butter until well combined.
  4. Press the mixture onto the bottom of a 9-inch springform pan to form an even crust.
  5. Bake for 10 minutes. Remove from the oven and let it cool completely.
  6. Coconut Milk & Chia Seeds Filling:
  7. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
  8. Add the coconut milk, granulated sugar, cornstarch, and vanilla extract. Beat until smooth.
  9. Stir in the chia seeds until evenly distributed.
  10. Pour the filling over the cooled pistachio crumble base.
  11. Refrigerate for at least 4 hours or until set.
  12. Mocha Latte Topping:
  13. In a mixing bowl, combine the heavy cream, instant coffee granules, cocoa powder, and powdered sugar.
  14. Using an electric mixer, whip the mixture until stiff peaks form.
  15. Spread the mocha latte topping over the chilled cheesecake.
  16. Refrigerate for an additional hour to let the topping set.
  17. Slice and serve this dreamy delight cheesecake, and enjoy!
