Banana Mint Mocha Cheesecake

Ingredients:

  • 2 cups Banana Pudding mix
  • 1/2 cup Unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup Granulated sugar
  • 4 Large eggs
  • 1 tsp Peppermint extract
  • 1 cup Mini chocolate chips
  • 1/4 cup Brewed coffee
  • 1 tbsp Unsweetened cocoa powder
  • 1/2 cup Heavy cream

Directions:

  1. Preheat oven to 325°F.
  2. Combine Banana Pudding mix and melted butter. Press mixture into the bottom of a 9 inch springform pan. Bake for 10 minutes and then set aside to cool.
  3. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until fluffy.
  4. Add sugar and beat until well combined.
  5. Add eggs, one at a time, beating well after each addition.
  6. Stir in peppermint extract and mini chocolate chips.
  7. Pour mixture over cooled Banana Pudding base. Bake for 55 minutes or until center is almost set.
  8. Cool on a wire rack for 10 minutes.
  9. In a small saucepan, combine brewed coffee and cocoa powder. Cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat and cool slightly.
  10. Add heavy cream to the saucepan and mix well.
  11. Pour mocha latte topping over the cooled cheesecake. Chill for at least 2 hours before serving.
