Ingredients:

  • 1 and a 1/2 cups of Cinnamon Roll flavored Granola
  • 1/4 cup of Maple Syrup
  • 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup of Sugar
  • 1 teaspoon of Vanilla Extract
  • 2 large Eggs
  • 1/4 cup of Sour Cream
  • 1 cup of Mixed Berries
  • 1 cup of Heavy Cream
  • 1/4 cup of Powdered Sugar

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. Grease a 9-inch springform pan and set aside.
  3. In a mixing bowl, combine the Cinnamon Roll flavored Granola and Maple Syrup and mix until well combined. Press the mixture into the bottom of the prepared pan and set aside.
  4. In a separate mixing bowl, cream the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Gradually mix in the sugar, and then the vanilla extract. Mix in the eggs one at a time, and then fold in the sour cream.
  5. Pour the mixture over the granola crust and smooth out the top with a spatula.
  6. Bake the cheesecake for 35-40 minutes, or until the top is golden brown and it has set.
  7. Let it cool to room temperature, then chill in the refrigerator overnight.
  8. Meanwhile, whisk together the Heavy Cream and Powdered sugar until stiff peaks form.
  9. Top the cheesecake with Mixed Berries and a dollop of Whipped Cream before serving.
