Say cheese! Meet your new personalized cheesecake recipe:

Cheesecake with Parmesan & Garlic base, Vanilla filling, and Peach & Mango topping

Ingredients:

  • 1 cup Parmesan cheese, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup butter, melted
  • 2 cloves garlic, minced
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 can peach slices, drained
  • 1 mango, peeled and diced
  • 2 tbsp sugar

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a mixing bowl, combine Parmesan cheese, flour, melted butter, and minced garlic. Press mixture onto bottom of prepared pan to form an even crust.
  3. In another mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and 1/2 cup sugar until smooth. Add eggs and vanilla extract, and beat until well combined.
  4. Pour filling over crust and smooth top with a spatula. Bake for 35-40 minutes or until set.
  5. Meanwhile, in a saucepan, combine peach slices, diced mango, and 2 tbsp sugar. Cook over medium heat, stirring occasionally, until mixture thickens and fruit is tender, about 15 minutes.
  6. Remove cheesecake from oven and let cool to room temperature. Spread peach and mango topping over the top. Refrigerate for at least 2 hours or until well chilled.
  7. Serve and enjoy!
