Passionately Chocolaty Cheesecake
Graham Cracker Base
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
Passion Fruit Filling
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup sugar
4 large eggs
1/3 cup passion fruit juice
1 tsp vanilla extract
Chocolate Ganache Topping
6 oz semi-sweet chocolate chips
1/2 cup heavy cream
1 tsp vanilla extract
Instructions
Preheat your oven to 325°F.
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture onto the bottom of a 9-inch springform pan and set aside.
Using an electric mixer on medium speed, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth.
Add the eggs one at a time, beating well after each addition.
Stir in the passion fruit juice and vanilla extract.
Pour the cream cheese mixture onto the prepared crust, spreading it evenly.
Bake the cheesecake for about 55-60 minutes, or until the edges are set and the center is slightly wobbly. Allow the cheesecake to cool completely before adding the chocolate ganache topping.
To make the topping, place the chocolate chips in a heat-proof bowl. In a small saucepan, heat the heavy cream until it comes to a simmer. Pour the hot cream over the chocolate chips and stir until the chocolate is melted and the mixture is smooth. Stir in the vanilla extract.
Spread the chocolate ganache over the cooled cheesecake, then refrigerate the cheesecake until the ganache is set.
