Cayenne, Bourbon & Orange Cheesecake
Ingredients:
- 8 oz Cayenne Pepper & Dark Chocolate Cookies
- 4 oz Unsalted Butter, melted
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup Granulated Sugar
- 4 Eggs
- 1/2 cup Bourbon
- 1/4 cup Caramel Sauce
- 1 tsp Pure Vanilla Extract
- 1/4 cup Fresh Orange Juice
- 1 tbsp Orange Zest
Instructions:
- Preheat the oven to 350°F.
- Pulse Cayenne Pepper & Dark Chocolate Cookies in a food processor until fine crumbs form. Add melted butter and pulse until combined.
- Press the crumb mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
- Reduce oven temperature to 325°F.
- Using an electric mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add granulated sugar and beat until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add Bourbon and Caramel Sauce and mix well.
- Pour cheesecake filling over cooled crust and bake until set, about 45 minutes.
- Let cool to room temperature, then refrigerate until fully chilled, about 2 hours.
- In a small bowl, whisk vanilla, orange juice and orange zest. Spread over chilled cheesecake before serving.
