In a large bowl, mix quinoa, melted butter, and 2 tablespoons sugar. Press mixture into bottom of 9-inch springform pan.
In another large bowl, beat together softened Norman's Kosher Cholov Yisroel Cream Cheese and 1 cup sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract and 1 cup heavy cream.
Pour cream cheese mixture into crust.
Bake for 45-50 minutes, or until center is almost set. Allow to cool to room temperature.
In a small pot, heat 1/2 cup heavy cream until just boiling.
Remove from heat and stir in chocolate chips until melted and smooth.
Pour chocolate ganache over cooled cheesecake and spread evenly.
