Creamy Quinoa Cheesecake with Chocolate Ganache

Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1/4 cup butter, melted
  • 2 tablespoons sugar
  • 3 (8oz) containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 cup heavy cream
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix quinoa, melted butter, and 2 tablespoons sugar. Press mixture into bottom of 9-inch springform pan.
  3. In another large bowl, beat together softened Norman's Kosher Cholov Yisroel Cream Cheese and 1 cup sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract and 1 cup heavy cream.
  4. Pour cream cheese mixture into crust.
  5. Bake for 45-50 minutes, or until center is almost set. Allow to cool to room temperature.
  6. In a small pot, heat 1/2 cup heavy cream until just boiling.
  7. Remove from heat and stir in chocolate chips until melted and smooth.
  8. Pour chocolate ganache over cooled cheesecake and spread evenly.
  9. Refrigerate for at least 4 hours, or until firm.
