Cheers & Chocolate Cheesecake
Ingredients:
- 10 oz Parmesan cheese, grated
- 2 cloves garlic, minced
- 8 tbsp unsalted butter, melted
- 24 oz Norman's Kosher Cholov Yisroel cream cheese, softened
- 1 cup granulated sugar
- 3 tbsp all-purpose flour
- 4 large eggs
- 1/2 cup whiskey
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 box fudge brownie mix
- eggs, oil, and water as listed on brownie mix box
Directions:
- Preheat oven to 350°F.
- In a food processor, pulse together Parmesan cheese, garlic, and melted butter until smooth.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat together Norman's Kosher Cholov Yisroel cream cheese, sugar, and flour until smooth and creamy.
- Add eggs one at a time, stirring between each addition.
- Mix in whiskey and semi-sweet chocolate chips until well combined.
- Pour mixture over the cooled Parmesan crust.
- Bake for 50-55 minutes, or until the edges of the cheesecake are set but the center still jiggles slightly.
- Remove from oven and let cool to room temperature, then chill in the refrigerator for at least 2 hours or overnight.
- Prepare fudge brownie mix according to instructions on box.
- Spread brownie batter over the chilled cheesecake.
- Bake for an additional 10-12 minutes, until the brownie is set.
- Let cool to room temperature, then chill in the refrigerator for at least 1 hour before serving.
- Serve chilled, garnished with whipped cream and additional chocolate chips if desired.
