Say cheese! Meet your new personalized cheesecake recipe:

Cheers & Chocolate Cheesecake

Ingredients:

  • 10 oz Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 8 tbsp unsalted butter, melted
  • 24 oz Norman's Kosher Cholov Yisroel cream cheese, softened
  • 1 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 4 large eggs
  • 1/2 cup whiskey
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 box fudge brownie mix
  • eggs, oil, and water as listed on brownie mix box

Directions:

  1. Preheat oven to 350°F.
  2. In a food processor, pulse together Parmesan cheese, garlic, and melted butter until smooth.
  3. Press mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.
  5. In a large bowl, beat together Norman's Kosher Cholov Yisroel cream cheese, sugar, and flour until smooth and creamy.
  6. Add eggs one at a time, stirring between each addition.
  7. Mix in whiskey and semi-sweet chocolate chips until well combined.
  8. Pour mixture over the cooled Parmesan crust.
  9. Bake for 50-55 minutes, or until the edges of the cheesecake are set but the center still jiggles slightly.
  10. Remove from oven and let cool to room temperature, then chill in the refrigerator for at least 2 hours or overnight.
  11. Prepare fudge brownie mix according to instructions on box.
  12. Spread brownie batter over the chilled cheesecake.
  13. Bake for an additional 10-12 minutes, until the brownie is set.
  14. Let cool to room temperature, then chill in the refrigerator for at least 1 hour before serving.
  15. Serve chilled, garnished with whipped cream and additional chocolate chips if desired.
