Apple Pie Rocky Road Cheesecake with Salted Caramel Topping

Ingredients:

  • 1 1/2 cups apple pie crust (finely crushed)
  • 1/4 cup unsalted butter (melted)
  • 3 (8 oz) containers of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup mini marshmallows
  • 1/3 cup chopped pecans
  • 1/3 cup mini chocolate chips
  • 1/4 cup caramel sauce
  • 1/2 teaspoon sea salt

Instructions:

  1. Preheat oven to 350°F.
  2. Mix apple pie crust and melted butter. Press into a 9-inch springform pan.
  3. With an electric mixer, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition.
  4. Stir in heavy cream.
  5. Fold in mini marshmallows, chopped pecans, and mini chocolate chips.
  6. Pour mixture into crust and smooth out the top.
  7. Bake for 45-50 minutes until the center is almost set. Cool on a wire rack for 10 minutes.
  8. For the Salted Caramel Topping, mix caramel sauce and sea salt.
  9. Spread over the cheesecake while it's still slightly warm. Chill in the fridge for at least 2 hours.
  10. Serve chilled and enjoy!
