Apple Pie Rocky Road Cheesecake with Salted Caramel Topping
Ingredients:
- 1 1/2 cups apple pie crust (finely crushed)
- 1/4 cup unsalted butter (melted)
- 3 (8 oz) containers of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup heavy cream
- 1/2 cup mini marshmallows
- 1/3 cup chopped pecans
- 1/3 cup mini chocolate chips
- 1/4 cup caramel sauce
- 1/2 teaspoon sea salt
Instructions:
- Preheat oven to 350°F.
- Mix apple pie crust and melted butter. Press into a 9-inch springform pan.
- With an electric mixer, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition.
- Stir in heavy cream.
- Fold in mini marshmallows, chopped pecans, and mini chocolate chips.
- Pour mixture into crust and smooth out the top.
- Bake for 45-50 minutes until the center is almost set. Cool on a wire rack for 10 minutes.
- For the Salted Caramel Topping, mix caramel sauce and sea salt.
- Spread over the cheesecake while it's still slightly warm. Chill in the fridge for at least 2 hours.
- Serve chilled and enjoy!
