Citrus Vanilla Cheesecake Recipe
Ingredients:
- 1 and 1/2 cups vanilla wafer crumbs
- 5 tablespoons unsalted butter, melted
- 2 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup Greek yogurt
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon grated orange zest
- 1/4 cup freshly squeezed orange juice
Instructions:
- Preheat the oven to 350°F (180°C).
- Mix vanilla wafer crumbs and melted butter in a bowl. Press the mixture onto the bottom of a 9-inch springform pan.
- In a separate bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, Greek yogurt, and honey until smooth.
- Add the eggs, vanilla extract, orange zest, and orange juice and mix until well combined.
- Pour the mixture into the prepared crust and smooth the top with a spatula.
- Bake in a preheated oven for 45-50 minutes or until the edges are lightly golden and the center is set.
- Remove from the oven and let cool to room temperature.
Orange & Vanilla Topping:
- 1/4 cup freshly squeezed orange juice
- 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 1 teaspoon cornstarch
- Mix the orange juice, honey, and vanilla extract in a saucepan.
- Add the cornstarch and whisk until well combined.
- Cook over medium heat, stirring constantly until the mixture thickens.
- Remove from heat and let cool to room temperature.
Serving:
- Remove the cheesecake from the springform pan and transfer to a serving plate.
- Drizzle the orange & vanilla topping over the cheesecake.
- Refrigerate for at least 2 hours before serving.
- Garnish with fresh orange slices and mint leaves if desired.
