Citrus Vanilla Cheesecake Recipe

Ingredients:

  • 1 and 1/2 cups vanilla wafer crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange zest
  • 1/4 cup freshly squeezed orange juice

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Mix vanilla wafer crumbs and melted butter in a bowl. Press the mixture onto the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, Greek yogurt, and honey until smooth.
  4. Add the eggs, vanilla extract, orange zest, and orange juice and mix until well combined.
  5. Pour the mixture into the prepared crust and smooth the top with a spatula.
  6. Bake in a preheated oven for 45-50 minutes or until the edges are lightly golden and the center is set.
  7. Remove from the oven and let cool to room temperature.

Orange & Vanilla Topping:

  • 1/4 cup freshly squeezed orange juice
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  1. Mix the orange juice, honey, and vanilla extract in a saucepan.
  2. Add the cornstarch and whisk until well combined.
  3. Cook over medium heat, stirring constantly until the mixture thickens.
  4. Remove from heat and let cool to room temperature.

Serving:

  • Remove the cheesecake from the springform pan and transfer to a serving plate.
  • Drizzle the orange & vanilla topping over the cheesecake.
  • Refrigerate for at least 2 hours before serving.
  • Garnish with fresh orange slices and mint leaves if desired.
