Say cheese! Meet your new personalized cheesecake recipe:
Feta & Spinach Cheesecake with Vanilla Filling and Peach & Mango Topping
Ingredients:
- 1 cup of crushed graham crackers
- 4 tablespoons of melted butter
- 1 cup of chopped spinach
- 3/4 cup of crumbled feta cheese
- 16oz of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup of granulated sugar
- 3 eggs
- 1 tablespoon of vanilla extract
- 1 sliced peach
- 1 sliced mango
- 1/4 cup of honey
Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix the crushed graham crackers with the melted butter and press the mixture into the bottom of a 9-inch springform pan.
- In a separate bowl, mix the spinach with the crumbled feta cheese and spread the mixture over the graham cracker base.
- In another bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with the granulated sugar until creamy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and pour the mixture over the spinach and feta cheese base.
- Bake the cheesecake for 45-50 minutes or until the edges are slightly brown and the center is set.
- Turn off the heat and let the cheesecake cool inside the oven for 20 minutes before removing and chilling in the fridge for 2-3 hours or until firm.
- In a small saucepan, mix the sliced peach, sliced mango, and honey over low heat until the fruits are soft and caramelized.
- Spread the peach and mango mixture over the top of the cheesecake and chill the cheesecake again for 30 minutes.
- Slice and serve chilled.
