Ingredients:

  • 1 ½ cups crushed vanilla wafer cookies
  • 1/3 cup unsalted butter, melted
  • 2 ripe bananas, mashed
  • 2 containers (8 oz each) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions:

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the crushed vanilla wafer cookies and melted butter. Press the mixture onto the bottom of a 9-inch springform pan to form the crust.
  3. In another mixing bowl, whisk the mashed bananas, Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and vanilla extract until smooth. Add in the eggs one at a time, mixing well after each addition.
  4. Pour the filling onto the crust. Bake the cheesecake until the edges are set and the center is slightly jiggly, for about 45-50 minutes.
  5. Let the cheesecake cool to room temperature before transferring it to the refrigerator. Chill for at least 4 hours before serving.
  6. In another mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled cheesecake before serving.
